tomato basil soup

2 cans (28 oz) diced tomatoes
1 yellow onion – chopped (i used a red onion b/c i like them better)
2 cloves of garlic – chopped ( i used 3!!)
1 tsp olive oil
2 cups vegetable broth
1 cup greek yogurt – plain
1 cup shredded cheddar cheese
1/2 cup basil – chopped
2 tsp oregano
1 tsp sugar
salt and pepper to taste

***sautee the onion and garlic

***in food processor, puree 1 can of tomatoes, then place in large sauce pan over medium heat. then put 2nd can of tomatoes in processor, then add onions & garlic, olive oil, yogurt, basil, and oregano; and puree. add to to sauce pan. add broth, cheese, sugar, and salt and pepper. let simmer for about 30 minutes.

makes about 6 servings

this is even better the 2nd day!!
