Always up for trying something new especially when described as “simple”. I found this recipe and decided it was definitely worth a try! Here is the link to the recipe:
The only draw back to this recipe is that it did not call for garlic! So I added 4 cloves (minced). And I am not a fan of celery, so I opted out of adding. As for the olive oil, I used toasted almond olive oil. I also added some corn. And my version is not vegan as the only broth I had was chicken broth.
